docsy-example fails to run locally

Taking inspiration from #100, I created a new repo using the Docsy Example Project as a template.

Then followed instructions to clone the repo and then build using the docker image, but after a docker-compose up I get the following error:

It seems the base image doesn't doesn't have hugo extended installed. Using the Dockerfile in this PR should work.

I currently can't test it because of an unrelated issue, as soon as I resolve it I'm going to merge that PR.
