Wanted change

Documentation identifies key differences from Tecnativa's version and reasons to use this version.

Reason for change

The documentation only says that it is based on @Tecnativa's version and is designed as a drop-in replacement, but doesn't say why to use this drop-in replacement instead.

Because tecnativa hadn't pushed any updates to their image in more than 3 years when we released our image

Ours can also run as read-only in all contexts.
