Adopt Additional XML Spector Tests

A few more models and test cases were added to the [xml tests](https://github.com/microsoft/typespec/blob/main/packages/http-specs/specs/payload/xml/main.tsp). We should add the additional tests that are missing https://typespec.io/can-i-use/http/
