Edits the 2026-05-29 ClickStack demo days doc only: fixes a name typo (Aarron → Aaron), swaps the MCP server improvements YouTube embed to a new video ID, and removes the paragraph about Brandon’s EE/open-source import regression and ESLint guard so that section is shorter.
