chore: Add support for 2.7.0, drop 1.27.0 and 2.4.0

Needs stackabletech/docker-images#1411

See the overarching issue, but NiFi 2.7 added support for Iceberg with REST catalog, but dropped Hive metastore support. So I added a new integration test using the (new fancy) Hive metastore REST catalog and Keycloak for authentication.
