chore(ci): update pipelines

This patch adds 3 changes:

• replaces (sometimes outdated) workflow versions with latest sha - no worries, these get automatically bumped by dependabot
• uses Node.js version defined in .nvmrc file
• removes NPM token as I added the release pipeline as trusted workflow
